Resulting of ten years of research, FLUORALYS® is a laboratory analyzer, useful for production allowing a quality control of food products resulting from heat treatments : cooking , roasting or frying.
The specificity of fluorescence technology, which is the core of the analyzer, is to be sensitive to changes in products during heat treatment, which makes it an excellent tool for monitoring all reactions related to these processes.
FLUORALYS® proposes two applications :
- Measurement of compounds generated by Maillard reactions ( reaction between sugars and / or fatty acids and proteins provoked by a heat treatment ), and in particular the formation of undesirable neoformed compounds such as acrylamide , furan , ... etc. , with specific calibration models
- Comparison of a product to a reference ( quality target end-product or raw material before process) for the characterization of the process impact, the identification of its critical steps for optimization and standardization of end-products
FLUORALYS® is able to analyze raw samples in one minute , without prior preparation. The analyzer has been designed to allow a routine quality control with implementation of corrective procedures and their monitoring.

The measure by a calibration model of a specific indicator by FLUORALYS® allows a fast quality control of the finished products at line.
The method of comparison to a reference product uses global information of the fluorescence and has multiple contribution in R & D and production. (Monitoring of aging, quality control, process monitoring, evaluation of the variability and identification of critical process steps)
