FLUORALYS ® allows the measurement of acrylamide in real time on a variety of products created from heat treatments such as cooking , roasting and frying like chips , chicory , cookies, etc …
To predict acrylamide from spectra obtained with FLUORALYS ®, a calibration model is developed to link the fluorescence data with acrylamide concentrations measured by the reference technique : LC-MS/MS ( over thirty samples ).
Prior, those models are developed in R & D on samples. After this phase of implementation, FLUORALYS ® can be used in production for a routine screening and monitoring of acrylamide content of end-products. Acrylamide levels are automatically calculated based on the calibration model, with a repeatability error between 15-20% for acrylamide concentrations between 50 and 10 000μg/kg. The lower limit of quantification is related to the sensitivity limit of the reference method .
These calibration models are the subject of alerts in case of value deviation for a possible re-enrichment .
Performance are similar on potato chips, cookies and chicory , the range of acrylamide varies depending of the production values.
